Chilli Crayfish

Use a brush to scrub and wash the crayfish and placed them in a steaming plate. Sliced some ginger and placed on top of the crayfish and sprinkled 1 tsp of chinese wine on them.

Steam them for about 15 minutes or when the shell of the crayfish turned orangy colour but be careful not to let the water in the wok dry up during steaming.

After steaming, drain the water in the steaming plate and when cool, remove the flesh from the shell of the crayfish and set aside.

To prepare the sauce, just follow the instructions behind the label of the jar. I used about half bottle of the chilli sauce.

When the sauce boiled, just add one beaten egg into it and mix well and pour over the crayfish.

Curry Vegetables with sting ray

Made this curry vegetables with sting ray quite few months back but forgot to post the photos here.

Very easy to cook this dish, just follow the instructions on the back of the curry sauce behind the packet. Optional can add fish into the curry vegetables but I added sting ray.

This tasted so good.

Fish in soya sauce cooked using the Happy Call Pan

Using the Happy Pan Call to stir fry my fish in dark soya sauce, with little sugar and sesame oil and water.

Fish with leek using the Happy Call Pan


My fish is too big for the pan, so I cut off the head.

Grilled both sides of the fish using the happy call pan, no oil added.
When almost cooked, add the other ingredients like ginger, leeks, chillis, sugar, dark soya sauce, water, etc
The close the pan with magnet lock and cook till the fish is done.

Fish fillets with bread crumbs


Marinated fish fillets with salt or soya sauce and sesame oil(optional).
Dip fish in one beaten egg and dust with corn flour then dipped into egg again and coat with breadcrumbs.
Deep fry till golden brown.

Pan Fried Prawns with garlic



Add equal amount of light soya sauce and chinese wine and sugar

to taste while pan frying the prawns. Just spoon the seasoning onto the prawns on either side while pan frying them. Yummy.

Sting Ray with tomato and ketchup


This is same as the cauliflower with tomatoes and ketchup.

Only this time I used sting ray.


I steam some sting ray with ginger slices. When steamed, drained the water collected in the dish and discard the ginger.
Set the sting ray onto a plate.
Next cook the sauce.
Fry some slices of onion, tomatoes, ketchup, water and pinch of salt.
When boiled, add 1 egg white. Mix them.
Pour sauce over sting ray...yummy...goes well with rice.

Sweet and Sour Fish


Sweet and sour sweet. Just deep fried the fish and make a sweet and sour sauce and pour over it.

Did not add onions cause hubby and sons hated onions. So plain.

Sambal StingRay


This is so simple. Just get your favourite bottle of sambal and spread onto the stingray.

Baked for about 20 to 25 mintues or till cooked at 190 degrees celsius.
Yummy.

Nonya Fish


I bought this packet of nonya sauce from the market.

I fried the fish (optional way is to steam the fish), set the fish aside, cook the packet of sauce and add some water to it. More water if you want it to be dilute. It tasted good just like the nonya sauce that I bought from Malacca.

Sweet & Sour Prawns with wonton skin


This is easy, just deep fried some wonton skin and set aside.

Cook some prawns with sweet and sour sauce and top with the wonton skin. Wonton skin can serve separately and dip in the sauce.

Baked Fish with sweet and sour sauce


This is easy, just baked the fish with sweet and sour sauce for about 30 minutes at 200 degrees celsius. For crispy onion, you can fry them first, if not just baked them together with the fish.

Prawns with breaded crumbs


This is so easy.

Just marianted the prawns with light soya sauce and sesame oil.

Dust them with some corn flour and dip into beaten egg and coat with breaded crumbs.

Deep fry till golden brown.

Serve the chilli sace or ketchup.

Steam Fish


Now I am so mad...hahaha. I got a bigger plate for my fish but I forgot to buy spring onion to garnish my fish...grrrrr. My family like the gravy. It is done so easily, just some light soya sauce, water, wine and the secret is rock sugar.
