Fried Bananas

This is a very easy snack to make.
Made a batter of 1 cup of plain flour, 1 tbsp of sugar (more if you prefer sweet), and some water. Cut the bananas into bite sizes and mixed with the batter. Make sure the batter is not too dilute, you need to adjust the water.

Deep fried in clean hot oil till golden brown. Serve hot....yummy.

Sultana Cookies


Sultana Cookies (makes about 25 cookie)
200 gm butter
100 gm caster sugar
1 egg beaten
1 tbsp milk
350 gm plain flour
1 tsp baking powder
200 gm sultanas (or dried fruits)
Method
Preheat oven to 180 degree celsius
Line a baking tray with baking paper.
Cream butter and sugar, then beat in the egg and milk.
Sift flour and baking powder together and fold into the mixture with the sultanas.
Drop the tablespoons of the mixture onto the baking tray and bake for around 15 minutes, or until golden brown.
(Alternatively, you can egg wash the cookies for the golden brown colour)
Cool on a rack.

Wantan in watercress soup


Hahaha....normally I will add yong tau foo to my watercress soup but as I did not buy any yong tau foo , so I just make some wantan and put in my watercress soup...lol

Banana Muffins

This is the first time I baked banana muffins, it tasted good but I am not satisfied with look of the muffins. I guess it was because I opened the door of the oven while baking....lol

The inside muffins are brown while the outside is slower so I opened the oven door to change the direction of the tray and it is a mistake, the muffins sunk when I opened the door...lol





This recipe makes 12 medium sized muffins
2 Large ripe bananas
1/2 - 3/4 cup caster sugar
1 large egg
90 gms melted butter
1 cup self raising flour

Mashed bananas with sugar, beat in the egg and butter, fold in the flour.
Pour into muffin cases and bake in preheated 180 degree oven for 20-23 minutes until muffin tops are golden and cooked through.
Allow to cool slightly on wire rack.

(Note: I did not mashed the bananas but cut them into thin slices and beat together with the sugar, egg and butter)

Mee Goreng (Fried Yellow Noodles)

Yellow Noodles

Fish Cake

Chilli paste

1tsp chilli paste, 1tbsp dark soya sauce, 1 tbsp light soya sauce, 3 tbsp ketchup

Finished product - Mee Goreng


Ingredients
300 gm yellow noodles
fish cake (sliced)
potato (peeled and cubed)
green vegetables (optional)
bean sprouts (optional)
tomatoes (optional)
2 eggs
Seasoning
1 tbsp light soya sauce (or to taste)
1 tbsp dark soya sauce
3 tbsp ketchup
1 tsp chilli paste(more if you like spicy)
Method
Peeled potato and cut into cubes and put into water to boil till cooked but not very soft.
Put all the seasoning in a bowl and set aside.
Boil some water and add noodles and stir very quickly (noodles not to be soggy), drain and set aside.
Heat some oil in wok, fry the potatoes and fish cakes and all ingredients and stir fry till cooked.
Add noodles and seasoning and stir well.
Make a well in the centre of the noodle, add two eggs and stir well to scrambe them , then mixed all together with noodles.
Serve hot and garnish noodles.
P.S. I added only fish cake and potato as I wanted to taste the noodles without having too much ingredients but I forgot to add vegetables...lol

Sambal Ikan Bilis

Ingredients
Ikan Bilis
Onion (Sliced)
1tsp sugar
2 tsp sambal belachan
Method
Fry onion till fragrant (not burnt)
Add ikan bilis and seasoning.
Fry till ikan bilis absorbed all the seasoning and cooked.

Chicken with mushroom and tanghoon


I run out of ideas on what to cook. So just looked at the fridge, saw some chicken, mushroom and tang hoon. So that is new creation....lol
Ingredients
Mushroom (soaked in hot water till soft then drained)
Chicken meat
Tang hoon (soaked in water)
Minced garlic
Seasoning
Oyster sauce to taste
few drops of sesame oil
some water
Method
Saute some garlic in oil in wok till fragrant
Add chicken meat and mushroom.
Add seasoning and stir fry till almost cooked
Add some water and tanghoon.
Stir fry till tanghoon absored all the gravy.
