Prawn Crackers from Indonesia

Looked at what my husband brought back from the office. Prawn crackers from Indonesia and yes they are uncooked. I had to deep fry them and put in air tight containers. Before fryingFry in hot oil.
Finished product.
Traditional koropok (crackers)-before frying Fry in hot oil.
Fry in hot oil and it expand.
Kept in air tight container.

Minced Garlic and Ginger

Hahaha, I minced a lot of garlic and ginger during my free time and put them in small containers and tucked away in the fridge so whenever I need them for cooking, I just scoop some from the container. So that I dont have to prepare so many things when I need to cook. Photo Source: alicecozycorner

Potato and Chicken, Hainanse Style

This is a very easy recipe to do. I love the potato and chicken as they absorbed the taste of the taucheo, garlic and ginger. Go well with white rice.
RECIPE : POTATO & CHICKEN WITH PRESERVED BEANS SAUCE
Ingredients

2 chicken thighs (the upper part and the drumsticks) chopped into small pieces
2 potatoes, peeled and cut into almost the same size as chicken (to ensure they cook at the same time)
1 bulb of garlic, peeled
1 large piece of ginger (as big as the bulb of garlic)
1 tablespoon of taucheo or preserved bean paste
some oil
half a cup of water

Method:

Pound garlic and ginger roughly
Heat oil and fry garlic and ginger till fragrant
Add taucheo
Add chicken and potato and fry
Add water and simmer. Cover the wok/pot and let it simmer until the chicken and potatoes are tender. Add more water if there is no gravy.
Season with some dark soya sauce and pepper. No salt is needed because usually the preserved bean paste is very salty.
Skim off the oil from the top because the chicken usually have plenty of fats after all the simmering. I usually do not like to remove the skin before cooking because I cannot get the aroma and the chicken will be dry and bland if cooked without its skin.

Bak Chang (Dumpling Festival)

Wow, times passes fast it is dumpling festival again. Thought it was just last year that my sister in law just make it and I post it as one of my first journal in my blog.

This year, my sister in law think her dumpling is not dark enough but as long as it is yummy and good, no one is complaining ...hahaha

Kee Chang (sweet dumpling with no ingredients in it and eaten with sugar).Sorry no recipe for this, it is my sister in law's recipe, looked too time consuming. I think I prefer to do the eating. (hehehe)

Cupcakes Tier

Saw these beautiful cupcakes pictures in the internet. I would like to purchase one of these cupcake tier. Not only can we put cupcakes on the tier, we can put candies, fruits, etc on them during CNY or other occasion. If my friends, you found these tiers on sale, please let me know. (lol)
