Roast Chicken

Ok I have upgraded from roasting drumstick to half chicken...lol. As there are only three of us, so I decided to roast only half the chicken. Next time, I will try roasting the whole chicken when there are more people.

It is so simple, just wash and dry the chicken and rub some salt all over the chicken. Before roasting, coat it with butter. After baking for 30 minutes at 180 degrees celcius, use a fork to poke some holes, turn the chicken over and roast for another 15 to 20 minutes and then turn over the chicken and roast for another 30 minutes or till it is crispy. During the last 15 minutes or so, turn the temperature to 200 degrees celcius and coat with butter again.
Instead of adding keropok to the roast chicken, I added some fried wantan skin.

Roasted Drumstick/vegetables with butter

This is so simple, I just coat the drumstick with butter and added some salt and pepper.

When almost roasted, I coat some butter again.

I placed the drumstick on top of the vegetables so that the vegetables will not be too dry from the direct heat of the oven.

I will try roast this way with the whole chicken.

This recipe taught by my American friend.

Ketchup Prawns

Wash Prawns and use a scissor to cut the top shell to remove veins but keeping the whole shell intact.
Pan Fried Prawns with little oil till almost cooked.

Add some ketchup and sugar(to taste) and mixed them all till fragrant and cooked. This method does not give any ketchup gravy, they are fried till the prawns absored all the ketchup and sugar.

Steam Fish

Ok I did not decorate it nicely, next time I will add parsley and spring onion and tofu...hehehe

It tasted like restaurant style but of course restaurant is better.

My version (adapted from a recipe from Rasa Malaysia)
4 tablespoon light soya sauce
1 tablespoon chinese wine
sugar to taste (best to use rock sugar grind to powder form)
few drops of sesame oil
Ginger (sliced)

Steam fish with ginger (Dont steam too long)
For sauce, add light soya sauce, wine, sugar and sesame oil.
When fish steamed already, throw away water contained during steaming
Heat some hot oil (about 1 or 2 tblsp) and drizzle on fish
Heat up sauce and pour over fish and decorate it whichever way you like. My sons like the fish.

Note: Must buy very fresh fish.

Agar Agar Art?

My husband say I can be bothered to make all these funny shapes for agar agar. He said you just pop the whole thing in your stomach, why waste time.........lol. My eldest son told me that "Mom that is very nice". (Geez, at least I have a supporter...lol.) My youngest son ask me: "So when can I eat them?" Finished Product
Just pour the different coloured agar agar into the desired moulds.
For the leaves and stem part, cut out from a plate of agar agar to the required shape.
All these need patience and inspiration. But I think I should be able to do better but I am too tired and lazy today (lol).
These were done very long time ago.
