Chicken with dried chilli and cashew nuts


Ingredients
200 gm chicken fillet (sliced thinly)-coated with some cornflour
4 pieces dried chilli
8 cloves garlic (sliced thinly)
150ml water (more if needed)
Roasted cashew nuts

Sauce
1 1/2 tablespoons dark soya sauce
1 tablespoon sugar
pinch of salt
1/2 tablespoon chinese cooking wine
Method
Heat oil in wok fry garlic and dried chilli till fragrant.
Add sliced chicken and stir fry well.
Add sauce and stir fry.
When chicken is almost cooked and brown, add water.
Stir fry till chicken absorbed almost all the sauce.Add roasted cashew nuts and fry till all the sauce dried up.
Serve hot.

Fried Nian Gao

Have you all start cooking your nian gao? Very lazy hor. Alas, managed to get to cooking my nian gao, I am so lazy too.

I did the first batch with nian gao and spring roll wrapper.







One get burnt, oil too hot.

Second batch with taro/yam

Make a good batter with flour, egg and pinch of salt and sandwich the nian gao with two slices of taro (sliced thinly).




The best is just fried nian gao in flour batter.

Sesame seeds chicken strips


Chicken fillets or strips
2 tablespoon light soya sauce
1 tablespoon chinese wine
2 tablespoon cornflour
3 tablespoon sesame seeds
some lemon juice

Marinate chicken strips in the light soya sauce, wine and cornflour for at least 30 minutes.
Add the sesame seeds.
Deep fry till golden brown.
Serve hot with dipping sauce like sweet and sour sauce or chilli sauce.

Prawns wrapped in spring roll

Ingredients
Medium prawns
1 tsp light soya sauce
1 tsp sesame oil
1 teaspoons curry powder or 5 spice powder
1 egg, beaten
small spring roll wrappers

Method
Marinate prawns in light soya sauce and sesame oil and curry powder or 5 spice powder
Wrapped prawns in spring roll wrapper and sealed with beaten egg.
Deep fried till almost golden brown.
Serve hot.











Wrapped the prawns tightly.

Fried Fish Slices with tomato sauce

I saw on TV program the chef who taught a food stall seller how to fry the fish for her fish soup noodle.

So i fried some fish slices.

Just marinate the fish slices with some light soya sauces and sesame oil to get rid of the fish smell.

Sifted some corn flour and then dip the fish slices in beaten egg and coated with cornflour and deep fry till almost golden brown.

I make some sweet and sour sauce for the fish too. Did not add onion or green pepper in the sauce cause my fussy family do not like, so i added some fried potatoes in it.

Pineapple tarts

Saw this pineapple tarts recipe today, so I decided to bake it. I did not add iced water and only added two egg yolks cause the pastry looked very wet.

Firstly, sifted all the flour.

Add the egg yolks, vanilla essence and rub in the butter. Divided into three portions and keep them in the fridge.

I rolled those ready pineapple fillings from Phoon Huat into balls.

Grease a heart shaped mould and filled the mould with half with pineapple fillings and the other half with the pastry and baked them at 180 degrees for 15 to 20 minutes and then remove the pastry and egg wash the pineapple fillings and baked for another 5 to 10 minutes.

The heart shaped pineapple tarts can be served during Chinese New Year and Valentine's Day.
