Steam Fish

Now I am so mad...hahaha. I got a bigger plate for my fish but I forgot to buy spring onion to garnish my fish...grrrrr. My family like the gravy. It is done so easily, just some light soya sauce, water, wine and the secret is rock sugar.

Steam Fish

I got the fishmonger to cut the fish "butterfly style" but after steaming, I found the plate is too small...hahahaha. Next time, I will use a bigger plate so you can see the sauce.

Ketchup Prawns

Wash Prawns and use a scissor to cut the top shell to remove veins but keeping the whole shell intact.
Pan Fried Prawns with little oil till almost cooked.

Add some ketchup and sugar(to taste) and mixed them all till fragrant and cooked. This method does not give any ketchup gravy, they are fried till the prawns absored all the ketchup and sugar.

Baby Bak Choy

This is easy.

Just blanch the bak choy in boiling water and a few drops of oil till the leaves withered or to the texture of your choice.
Arrange the bak choy on dish.
Next deep fried some white baits till golden brown and set aside.
For sauce, boiled 1 tbsp of oyster sauce and 1 tbsp of water (more if like more gravy) and pour over vegetables and topped with the fried white baits.

Steam Fish

Ok I did not decorate it nicely, next time I will add parsley and spring onion and tofu...hehehe

It tasted like restaurant style but of course restaurant is better.

My version (adapted from a recipe from Rasa Malaysia)
4 tablespoon light soya sauce
1 tablespoon chinese wine
sugar to taste (best to use rock sugar grind to powder form)
few drops of sesame oil
Ginger (sliced)

Steam fish with ginger (Dont steam too long)
For sauce, add light soya sauce, wine, sugar and sesame oil.
When fish steamed already, throw away water contained during steaming
Heat some hot oil (about 1 or 2 tblsp) and drizzle on fish
Heat up sauce and pour over fish and decorate it whichever way you like. My sons like the fish.

Note: Must buy very fresh fish.
