HongKong Ee Fu Noodle

Nowadays my family loved to eat the HongKong ee fu noodle. I think my cooking improved too (lol). For recipe, see my earlier posting.

Simmer Chicken with chestnuts

Ingredients

1/4 chicken with some fats (500 gm)
10 chestnuts (soaked)
2 mushroom (wedged)
1 spring onion (sectioned)
1/2 tsp chopped garlic

Seasoning

1 tsp oyster sauce
1 tsp light soya sauce
1 cup water
1/2 tsp sugar
1/4 tsp sesame oil
1/4 tsp shaoxing wine
pinch of pepper

Method

1. Remove chicken skin and clean well. Chop into small pieces.
2. Heat up 1 tbsp of oil saute garlic till fragrant
3. Add chicken pieces, chestnuts, mushrooms, seasoning, stir fry till even.
4. Cover lid and simmer over low heat for about 1/2 hour or gravey is thicken.
5. Garnish with spring onion on top and serve.

Note:
I omit the light soya sauce and add a little dark soya sauce to give the colour. Adjust the oyster sauce and sugar to taste.

Crispy Bean Curd Skin with fillings

This is very nice. And my husband ate the most and ate some of my share too....Grrrrrr.
Ingredients

4 fresh medium prawns (minced)
spring onion (chopped)-optional
2 tbsp plain flour (est)
2 tbsp corn flour (est)
1/3 to 1/2 bowl water (est)
1/2 cup diced chinese ham
bean curd skin (cut into square or rectangles)

Method

1. Mixed minced prawns, spring onion and chinese ham together.
2. To make filling, put plain flour and corn flour in bowl, add water gradually to mix to a thick paste (not too watery).
3. Add prawns, spring onion and chinese ham into bowl.
4. Take a piece of square bean curd skin and spread on a portion of filling and top with another piece of bean curd skin.
5. Repeat with the remaining filling and bean curd skin.
6. Deep fry stuffed bean curd skin till golden brown.
7. Remove and drain.
8. Let it cool and cut into slice.

Note: When you deep fry the bean curd skin, make sure your fire is not too big and dont use your hand to put the bean curd skin into the oil cause the oil might splash and burn your hands. Put the stuffed bean curd on your ladle and slowly put in the oil to deep fried. This is because your filling is wet so it caused the oil to splash. Good Luck.

No need seasoning as the bean curd skin and the ham is a bit salty already.

Pendant

Today, we learnt how to make a pendant. Inside is an oval stone. We used beads to wrap around the stone. Can make a ring using the same method too. The crystal dont look nice, I will try to look for a nice stone. I had in mind using tiny pearls to replace the crystal to make this pattern.

Yeah, I had made the shape of the pendant. It is not completed yet cause I need to look for a nice oval stone. I used small pearls instead of crystals, I think if I can get a nice stone, it would look great. I will try to make a ring too to go with the pendant. I am so happy with this course .

Necklace and Ring

Today lesson is fantastic. Love the necklace and ring. Quite easy to do but the cost of materials cost $30, very expensive. I have signed up for another 3 lessons (intermediate).

Agar Agar (Plain) with peaches

Chain necklace

This is the chain my teacher taught us to do. Dont really like the design but we did learn something about how to use tools to make those rings, etc. (material cost $16)

Next week the necklace would looks better. Will be pearl ring and pearl choker. (materials cost $30)

It would be cheaper, it i buy my own materials and make it. Now I think if I go overseas, guess I will buy those crystals beads, etc in bulks.hhahhahhaa

Glass Noodle and Bean Curd Rolls


Ingredients
1 bundle of glass noodles (tang hoon)
250 gm prok (minced)
4 mushroom (soaked in hot water till soft and shredded)
1 stalk spring onion
1 egg (beaten)
bean curd skin

Seasoning
1 tsp light soya sauce
1 tsp sugar
1 tbsp chinese rice wine

Method
1. Soak glass noodles until soft then cut into shorter lengths.
2. Rinse spring onion and slice thinly
3. Beat egg in bowl and add minced pork, spring onion and seasoning. Mix well.
4. Spread out bean curd skin.
5. Place glass noodles, mushrooms and pork fillings onto bean curd skin.
6. Roll up.
7. Steam bean curd rolls till cooked.
8. Let cool and cut into service pieces.

Pearl Ring

Hahaha.....saw a similar ring in the internet. No patterns to follow, but quite easy to do, so I did it. Very simple. Used a genuine pearl as a centrepiece.

Bought a strand of pearls in Beijing, China but it was too long and I got it cut to the length that I wanted and the salesgirl returned the extra pearls to me. These extra pearls had been sitting in my drawer for a long time (lol). Guess the next I would like to do is a pair of pearl ear rings and a pearl necklace.

Japanese Tofu with oyster sauce

tOk, I back to cooking now (lol). You can add chicken pieces and some greens. I have too many ingredients already so did not add chicken. If mushroom is too big cut into half. I love mushroom. Ingredients
1 packet Japanese tofu, cut into 1.5cm pieces
1 tsp chopped garlic
1/2 tsp chopped ginger
1 tbsp oil
1 tsp sesame oil
100g small prawns, shelled
Chinese black mushrooms, (soaked in hot water till soft),
carrots, sliced thinly

Seasoning (combine in a small bowl):
1/2 cup water
1 tbsp oyster sauce
1 tsp light soy sauce
1 tsp sugar
1/4 tsp pepper
1 tsp Shao Hsing Hua Tiau wine (optional)

Thickening (combine):
1 tbsp corn flour
2 tbsp water

Method
Pan fry tofu in hot oil until golden.
Dish out and drain on absorbent kitchen paper towels.
Heat oil and sesame oil in a wok; saute ginger and garlic until fragrant.
Add prawns, black mushrooms and carrots. Stir-fry well.
Add seasoning. Blend in thickening.
Add tofu pieces and pour sauce over. Serve immediately.

Jewellery Making Projects

Hey friends, I have a new hobby. I just signed up with the CC to learn jewellery making with beads, etc. I am temporarily posting my projects in my food blog.

Look for more projects in future postings (hahaha). I have learned floral arrangements, gift/hamper wrapping, photography, folk dancing, blogging, cooking (from nets) and now jewellery making. Might take up quilts too if I can find the time. Will be putting my quilts projects in my American website (lol).

I will still put new recipes in my food blog when my inspiration come back and when I feel better. I am not feeling so good and also busy with all the spring cleaning...........GRRRRRRR

My 1st class project done with help of teacher guide.Did this on my own..........yipee.
