Glass Noodle and Bean Curd Rolls


Ingredients
1 bundle of glass noodles (tang hoon)
250 gm prok (minced)
4 mushroom (soaked in hot water till soft and shredded)
1 stalk spring onion
1 egg (beaten)
bean curd skin

Seasoning
1 tsp light soya sauce
1 tsp sugar
1 tbsp chinese rice wine

Method
1. Soak glass noodles until soft then cut into shorter lengths.
2. Rinse spring onion and slice thinly
3. Beat egg in bowl and add minced pork, spring onion and seasoning. Mix well.
4. Spread out bean curd skin.
5. Place glass noodles, mushrooms and pork fillings onto bean curd skin.
6. Roll up.
7. Steam bean curd rolls till cooked.
8. Let cool and cut into service pieces.
