Ingredients
1/4 chicken with some fats (500 gm)
10 chestnuts (soaked)
2 mushroom (wedged)
1 spring onion (sectioned)
1/2 tsp chopped garlic
Seasoning
1 tsp oyster sauce
1 tsp light soya sauce
1 cup water
1/2 tsp sugar
1/4 tsp sesame oil
1/4 tsp shaoxing wine
pinch of pepper
Method
1. Remove chicken skin and clean well. Chop into small pieces.
2. Heat up 1 tbsp of oil saute garlic till fragrant
3. Add chicken pieces, chestnuts, mushrooms, seasoning, stir fry till even.
4. Cover lid and simmer over low heat for about 1/2 hour or gravey is thicken.
5. Garnish with spring onion on top and serve.
Note:
I omit the light soya sauce and add a little dark soya sauce to give the colour. Adjust the oyster sauce and sugar to taste.
